This happens because of the body science that works differently, both in the morning and evening.

Throughout the day we are often engaged in performing our routine activities, the cartilage in our knees and other parts begin to compress gradually. On the other side, when we go to sleep, our body is at total rest and only with some minor movements, so our cartilage again comes back to its original form. This is one of the reason, why we are taller in the morning but not much only by 1cm.

The other reason is that, our spinal cord has gentle materials in between the vertebrae and as we sleep having total rest, the materials in the stretch and thereby increase our height by 1 cm and when we wake up, the body again starts working followed by continuous movements.

Due to this, the materials in the vertebrae again gets compressed by the mass of our body. Therefore, the height gets reduced till evening.

In fact, the gravity is also responsible for it. Due to it, the materials between the vertebrae get flattens and pushes out the water in our spinal discs while we are standing.

This makes lose our 1 cm from our respective heights and as while sleeping, we are in horizontal position, so it is not affected the gravity.
